It takes at least an hour for a cyclist to warm up in Spain so if you have long climbs ahead the easier it will be to adjust, sounds strange but it's true. What you must try and do is take short breaks or a short coffee stop. If you end up having long and heavy lunches your body will find it really hard to adjust to the terrain.
